Pure Olive Oil:
This oil is the result of a blend of refined olive oil and extra virgin olive oil. The refined olive oil is produced in refinery from a virgin lampante oil through a refining process which consists of a de-acidification treatment to reduce acidity, deodorization to remove volatile compounds responsible for unpleasant odors and discoloration to remove brown compounds resulting from oxidative phenomena. The refined olive oil so obtained is delivered to BASSO and then it is mixed with extra virgin olive oil from EU, in order to reinstate part of the beneficial substances that are lost in the process of becoming olive oil.
Tips For Use:
This oil is suitable for all dishes. It is good to fry all types of food. Thanks to its neutral taste, it is an excellent oil for dressing sauces and vegetable preserves.
Pomace Olive Oil:
Pomace olive oil is made from pomace, the solid by-product of the extra virgin olive oil extraction process, which is composed of pit fragments, peel skins and pulp parts that mills normally convey to refineries for further processing. Pomace by-product still contains 5-10% of oil, which is extracted by using hexane solvent. Crude pomace oil such obtained is therefore submitted to the several stages of refining process such as deacidification to reduce acidity, deodorization to remove volatile compounds responsible for unpleasant odors, and discoloration to remove brown compounds produced by oxidative phenomena. The resulting product is refined pomace olive oil which is delivered to BASSO where it is mixed with extra virgin olive oil, in order to reinstate part of the beneficial substances lost. This way it becomes pomace olive oil.
Tips For Use:
This oil is especially suitable as an ingredient in bakery products (cakes, bread, bagels, biscuits, etc.). Thanks to its high content of waxes, it is able to give these products a friability similar to that obtained by using butter. Because of its neutral taste, this oil can also be used to season foods whenever it is better not to alter their flavor.
